Why Your Almond Flour Cookies Turn Out Dense

If you've ever pulled almond flour cookies from the oven only to find dense, heavy pucks, the problem isn't your baking skills. Almond flour plays by completely different rules than wheat flour. There are three main culprits: the flour grind, fat content, and leavening. Once you understand these, you can fix the density problem for good. Read below to see our tips and understand how each of these plays a crucial role in baking with almond flour.

The grind matters more than you think
Super-fine almond flour actually makes denser cookies than coarser almond meal. While this may seem counterintuitive, there is scientific evidence to back it up. You see, finer particles have more surface area and absorb up to 1.85 times their weight in water, compared to just 1.48 times for coarser grinds. When your dough is holding onto all that moisture, there's less liquid available to help cookies spread and develop a tender texture.
Blanched almond flour gives you pale cookies but tends toward density. Almond meal has a coarser grind and produces cookies that are 40-60% more tender. For softer cookies that give you a warm and comforting bite, go with almond meal. You'll want to save the super-fine flour for macarons, where appearance matters and you need that smooth finish.

Fat changes everything
Did you know almond flour contains 50% fat by weight versus wheat flour's less than 1%. When cookies hit 122Β°F, the cell structures rupture and release their oil before proteins can set up structure. The dough slackens briefly, then locks into whatever compact shape it achieved. The fat also makes almond flour cookies brown 25-30% faster, giving you dark outsides with gummy centers.
Bake at 325Β°F instead of 350Β°F. This gives proteins more time to set before fat liquefies. Your baking time increases by 3-5 minutes on average, but the texture improvement is dramatic.
Despite all that fat, almond flour still needs more added liquid than wheat flour because the high fiber content acts like a sponge. Getting this right is critical, just 1-2 tablespoons makes the difference between tender and gummy.

Leavening needs a boost
Without gluten, there's no protein network to trap carbon dioxide bubbles. All of a sudden, poof! The gases just escape. And leavening effectiveness drops by 50-70% compared to wheat flour.
Combat this by increasing baking powder by 25-50%. Use 1.25 to 1.5 teaspoons per cup instead of 1 teaspoon. Chill dough before baking to slow fat melting and give the leavening more time to work.

Replacing eggs
Aquafaba works best for light, tender cookies. Use 3 tablespoons chickpea brine per egg. You might need to reduce other liquids by 1-2 tablespoons or add extra almond flour.
Flax eggs help with creating that chewy texture we love and crave. Mix 1 tablespoon ground flaxseed with 2.5 tablespoons water and let it sit for 10-15 minutes. This will add a nutty flavor and it works great for chocolate cookies.
We also think that chickpea flour is underrated. Mix 3 tablespoons with 3 tablespoons water. If you're concerned about that bean flavor (who isn't, am I right?), don't worry - the baking helps eliminate it completely.
Some other favorites are applesauce and banana, they help make moist, cake-like cookies, but add density. Use 1/4 cup per egg and add an extra 1/4 to 1/2 teaspoon baking powder.

Getting moisture right
Adding 1 tablespoon cornstarch per 2 cups almond flour will help to absorb surplus liquid and create lighter texture in your cookies.
Another thing to watch out for is to stop mixing the moment you can't see flour streaks. Go slow and be mindful when mixing, overmixing releases oil and creates dense cookies - nobody wants that.
One of my favofrite tricks is to chill your dough for 20-30 minutes before baking. Chilled dough spreads 40-50% less and has better texture.
And finally, cool cookies for 10-15 minutes on the baking sheet before moving them. They'll finish cooking and firm up during this time.
